Pumpkin Spice Latte

Pumpkin Spice Latte







Ingredients
  • 2 cups milk (any % you choose)
  • 4 tablespoons canned pumpkin puree
  • 2 tablespoons white sugar
  • 2 tablespoons vanilla extract
  • 1/2 teaspoon pumpkin pie spice
  • 1/2 cup strong coffee or espresso
  • canned whipped cream
Instructions
  1. Add the milk, pumpkin, sugar, vanilla and pumpkin pie spice to a small sauce pan over medium-high heat. Bring almost to a boil, stirring constantly - if you allow it to boil it will get thick (yuck). Whisk the mixture until it starts to froth, about 1 minute. Divide milk mixture between two mugs. Add the coffee slowly down the side so you don’t disturb the milk froth, add a squirt of whipped cream and a pinch more of the pumpkin pie spice and enjoy.
Notes
NOTE: Keep a spoon on hand, because of the thick nature of pumpkin puree, you will want to stir the latte occasionally to keep it from getting thick at the bottom of your mug.
Another Note: To get a good thick froth, you can add COLD pumpkin mixture to a large glass mason jar. Cap and shake vigorously. When you have a good froth, REMOVE CAP and microwave the milk mixture to desired temperature. Never leave the cap on and do not shake a capped jar with hot liquid or you will get injured.

Saying goodbye to Uncle Leon

I can't believe Uncle Leon has passed from this life.  The last 2 years for him has been a living hell for him. He just ran out of oxygen.. from smoking for many years.  Uncle Leon will be greatly missed.  He was my dad's younger brother.  He was always the life of the party.  I have many memories thru the years of him and Aunt Geneva. 
We are having the memorial Saturday at Red Bud Park at the nutrition center.  It is going to be a pot luck lunch.  Now I must figure out a couple of dishes to make for this occasion.  Everyone loves my pina colada cake I make.  Am thinking a meat dish as well.  I can remember back in the day when I hated to cook anything.  Sometimes being a adult is a good thing.

Trevor Passed his driving test!

Look out Everyone! 

Here comes Trevor driving by himself!  He took his driving test at 2pm and he passed!  Am so proud of him.  When he got home he jumped in his truck and went to town.  BUT the first place he went was to put in his application at Marlow Foods!  He goes back tomorrow for his interview!  He did this all on his own.  I am very proud of him.

By working that will keep him out of trouble!

Trevor's 16th Birthday!

Happy birthday to my baby boy.  He has grown up super fast.  I am blessed to have such a good, caring son!  He is in 10th grade this year..

Ready for Fall!

                      





Am so ready for fall! I love sitting outside on my patio in the mornings drinking my pumpkin spice coffee.  Then at night snuggled up on the couch with a blanket.  I seem to be more creative in the fall months.  This Christmas I want to make my 3 sons quilts.  Which means I need to clean and organize my craft room once again and get my sewing machine ready to roll. 


Am ready to make some new fall recipes!  Mr. C. told me the other day he wasn't a big fan of crockpot cooking.. Oh dear I have always used the crockpot during the fall season.  Had no clue he felt that way.  Guess what I am not changing my cooking habits because he has always eat what I have fixed without complaint.. Here is a recipe I am for sure going to try this fall!

Crock Pot Santa Fe Chicken

     

    Ingredients

    Instructions

    1. In slow cooker, add chicken broth, beans, corn, tomatoes, cilantro, scallions, garlic powder, onion powder, cumin, cayenne pepper and salt and stir to combine.
    2. Lay seasoned chicken breasts on top of other ingredients inside slow cooker.
    3. Cook on low for 10 hours or on high for 6 hours.
    4. Half hour before serving, remove chicken and shred. Return shredded chicken to slow cooker and stir it into other ingredients. Adjust salt and seasoning to desired taste.

    Some other things I am going to do to get ready for fall is I am going to organize my stuff I have been buying with coupons for super cheap.  I have decided to  utilize Trevor's closet space and put a bookcase in it to hold my little stockpile I have going on.  I have bought 6 bottles of Tide for $2.50 each and I have about 3 bottles of shampoo and conditioner I paid vey little for them.   Right now I have the bottles of Tide in my laundry room on top of the dresser.  Doesn't look so good and makes the room feel cluttered.  Another thing I am going to do is get rid of a lot of my stuff out of the bedroom.  I feel like I have piles of something in every corner and its closing in on me. Maybe I can get stuff ready for a garage sale in two weeks and make some money to buy a few outfits for fall!

    Yes I am very excited for fall!  Anyone have any special trips or plans for this season coming up?

    Road trip!

    Yesterday (Tuesday) I drove 4 hours to Wheeler Texas. Mr. C. had to go back to work early and I told him I was coming to stay a few days with him.  Of course I can't go to work with him, but I plan on taking some photos of the town and exploring a bit. I also will take time to get a few letters wrote as well. I can always find ways to entertain myself.  Mr. C. gets worried that I will be bored. By now that man should know I will find something to waste time on.  (He thinks my pen pals and couponing is waste of time). He has no ideal how much I enjoy writing my friends! ).
          We are staying at Baymont Inn & Suites here at Wheeler Texas.  They are nice rooms. This one hasn't been here too long, so it feels modern and up to date.  Love the huge towels they have in bathroom! I also can't wait to try out the hot tub!
            I need to go down and see what they are having for breakfast this morning.  I would like a cold cup of orange juice.

    Being Ms. Suzie Homemaker

    Last night I decided to make more homemade laundry soap since I was at the bottom of my container.  I love making my soap and it doesn't take very long. 

    I used one bar of Zote  used cheese grater on it.
    Then I put in 3 cups of Borax
    Then 3 cup of Arm and Hammer washing soap
    I also added one cup of Oxi clean to it.

    Mixed it all together and BAM great detergent for the laundry!!
