Memorial Day Weekend


Here in Oklahoma the weather has been beautiful.  It’s in the lower 90’s with a nice breeze.  Mr. C has been outside most of the day.  Brody has been a huge help with grilling.  As always we ended up grilling way too much.  Which should mean leftovers for my lunches this coming week.

This weekend I have missed my loved ones.  Lots of great memories floating around in my mind of my parents.  Miss the family gatherings when mom and Grandma Pearl were here with us.  Each and everyday I miss the wisdom that mom and dad shared with me.

My new job is going okay.  I really am going to love it once I learn more about it.  It’s a learning curve for sure. No comparison to the flower shop at all.  Love the bi-weekly check so I know what my pay is each payday.  Most important I have health coverage.  At my age healthcare is critical.  It only takes a second for a accident to happen.

Will enjoy a paid day off tomorrow!  Wow who doesn’t like being paid to stay home? I’m over here doing the happy dance!  I feel like my new career is opening new doors for me.   Although in all reality I must say I need to give praise to God.  He is the one who has made all things possible.

51ST Birthday!!

My set up for my birthday party at LegalShield!  I was so glad to be here on my birthday. God answers prayers.  I so wanted a job with benefits.  Am very grateful to be here.

I made this cake for the house so we could celebrate my birthday together. Mr. C isn't much for chocolate but Brody and I are huge chocolate cake eaters.

Do I feel like I am 51 years old? No not really.  Everyday I am blessed to be living each and every day.  I have had a great life and made some awesome friends.  I can not even express how blessed I have been.  My boys and bonus children and Mr. C complete me.

Tyler is a diplomat

We are so proud of him and his accomplishments.

I hate that Mark died and left me with 3 young boys.  These boys needed their dad.  I wish that he could see the boys today.  I think he would be proud of how they have turned out.  Trevor has quite a few of Mark's characteristics.  Aaron has a lot of his dad's facial expressions.

Items I sent my Partner

I belong to the Facebook group SnailmailersRus.  Love this very active group!  I especially enjoy doing the recipe tags.  This is the items I am sending my Partner Marcia.  As you can tell I am enclosing some Watermelon seeds.  Am sure your wondering why I enclose the watermelon seeds.  The reason is because Rush Springs is known as The Watermelon Capital of the World.  
So when sending out my recipes I try to enclose at least one watermelon recipe as well.  Just adding a little touch is how I like to row.  If I have time I always enjoy decorating my envelope as well.  I am all about happy mail.
So if you enjoy pen pals you should hope over to the Facebook group and check us out.  You will not be disappointed.   The admins for the group stay on top of everything.  They do one heck of a job with 4k in the group.

Egg & Hashbrown casserole

A perfect Sunday morning.  Am cooking a egg and hash brown casserole.  It is very easy to make with ingredients you should have on hand.  As many of you know I’m all about casseroles.  So this recipe is perfect for my family.

Egg and Hash Brown Casserole

Prep time   15 minutes
Cook time  45 minutes
Total time   1 hour

Ingredients
     1/2 lb breakfast sausage (or you can use a combination of ham, bacon and breakfast sausage).

      Chopped veggies (optional) I used onion and green peppers.

       12 eggs ( today I only had 6 eggs)  so went with what I had.

        1 cup Milk
       
        1 package of frozen hash browns.

        1 cup cheddar cheese (shredded). Sometimes I use Mexican cheese.

        Salt and pepper to taste

Directions
     
       Brown breakfast sausage.  
       In a bowl, beat eggs and milk.  Stir in all other ingredients.  Put in a greased
        9x13 pan and bake at 350 for 45~55 minutes or until well set.  Make sure the middle
        of casserole is done.  Serve topped with Salsa and addition cheese.



This makes leftovers at my house.  Which is always a bonus.  I’m always looking for easy and quick
recipes.   Some are hits and others are misses.  This one is always a hit.

Kara's Baby Shower!

Tammy, Dana and Becky hosted Kara's baby shower. They did an awesome job for sure!! Tammy always goes the extra mile when she hosts party's.  What  I do know is that I am going to ask for her help when ever the need happens for us! 

The car racing theme was awesome as it defines Kara and Dylan's free time.  Perfect for the co-ed baby shower. Plus daddy to be has his race cars he drives.  If you don't know our family is huge into racing!!

Visited for nearly 3 hours before I went home.  Was nice to catch up with family and friends.  I really need to make more of a effort to visit with family more.

Can't wait till May when baby Laiklyn arrives!! You know this baby is going to be well loved!!
